Tortilla Española

My host mommy just taught me how to make my favorite spanish dish - tortilla espanola!

To explain it in a way that you all will understand it is basically an omelet with potatoes in it, but my host mom puts onions in it too to make it more rich in flavor.

So now here is the recipe to the best of my abilities....

Feeds 5-6 (maybe more)

Ingredients:
4 large potatoes
7 eggs
1 fourth of an onion
Olive oil
Salt

Slice the potatoes really thin
Chop the onion

Put them together in a pan with some olive oil salt (i honestly don't know how much of each, just juge it type thing)

Cook those slowly until the potatoes are nice and soft-like
- this will prolly take 20 mintues-ish

Drain all access all of oil

After that is done put In a bowl and mix them up so they breakdown.
Next add the seven eggs and a little more salt. And mix them all together.

Now put them back in the pan to cook. Depending on the pan you are going to have to flip it like a pancake several times in order to make sure the middle cooks and that each side is evenly cooked.
- depending on the pan this will take about five minutes

Once that's done, ¡buen provecho!
